Vogue — Marxito, the first organic fast food restaurant by Thierry Marx & Ora-ïto

Amidst the modernist, marshmallow pink decor dreamed up by Ora Ito, head chef Thierry Marx re-wires our preconceptions of fast food. This gourmet sandwich bar offers an exciting array of fillings on a base of perfectly baked, buckwheat bread. Drawing inspiration from both Bretagne, France (Marx’s hometown) and Japan, Marxito presents a diverse and enticing menu of sandwiches. On the menu? Smokey mozzarella (marinated eggplant, romaine lettuce and chili pepper sauce), pink salmon pickle (smoked salmon, avocado, Japanese radish, romaine lettuce, miso sauce and basil), eggplant heaven(guacamole with red onion, roasted sesame sauce and ginger tofu) and more. Comfort food desserts are also on offer and include buckwheat and tonka bean ice cream sundae and a matcha Crepe. As for the décor, architect Ora Ito’s design is part space shuttle, part traditional Japanese bar. Available from breakfast to lunch, this innovative discovery opens today in Paris’ 8th arrondissement.
